Sometimes, I just don’t feel like cooking. Like tonight. We have had such a busy weekend with trying to get the place ready to sell, and it was rather warm today. Apparently the mercury hit 37°C today (about 99°F). So a nice cheese platter was definitely a winner. We had a small wedge of Castello Blue, along with a nice Havarti and a herb and garlic Brie. Home made quince paste also made an appearance, along with some berries, prosciutto, and some spicy sorpressa. Not depicted were some marinated olives and artichokes, gherkins and an absolutely gorgeous smoked mushroom dip that I discovered a couple of months ago. I will post a picture of the dip soon. It is so delicious, that I am honour bound to share it with everybody!! Hopefully everyone else enjoyed their dinner as much as I did.
